I know, I know... I am a jewellery designer and you probably expect to learn about gemstones and precious little things. As a French native, it is no secret that I love my food .
Baking a galette des rois is a moment of creativity, patience, and care — just like designing a beautiful piece of jewellery. The galette des rois is a festive French tradition enjoyed with family and friends every January — much like the joy our clients feel when celebrating milestones with our sterling silver handcrafted jewellery.

Galette des Rois, yummy yummy French recipe!
Tradition : In France, l' épiphanie is celebrated on the 06th January.
The date the 3 wise Kings arrive to celebrate the birth of baby Jesus.
The tradition wants that a lucky charm called the fève, is hidden within. The youngest person goes below the table and decide who gets each slice. The person who finds the feve becomes King or Queen for the day and can choose a companion.
In France, bakers will sell their galettes with a golden cardboard crown.
Sharing this recipe is a reminder that both cooking and jewellery-making are about care, passion, and creativity — whether you’re crafting a galette or choosing a bespoke ring, every detail matters.
I make my own galette(s), and I do get very creative with the crown, as seen below.

This Galette des Rois recipe is suitable for 6-10 persons / slices.
2 rolls of puff pastry. (I usually get mine from France already made into a circular shape), 140g ground almonds, 2 eggs, 1 egg yolk, 90g sugar (make it up to 100g if you like it sweeter), 75g unsalted butter at room temperature so it softens.
And very important, One fève !! (I admit I do put 2 to increase chances of getting it, however my husband and the youngest child were the lucky ones this year).
- Preheat the oven at 200 C - 400 F
- Lay one of the puff pastry in the tart mold, use a fork to make tiny holes.
- Making la frangipane : In a deep bowl, mix together the almonds, sugar, soft butter, 2 eggs. I first used a spatula and then the whisk.
my tip : I add a couple of drops of almond essence to intensify the taste.
Spread your mix on the dough, keeping a small border all around, about 1 cm
Lay your fève down near the edge of the galette within the mix.
Mix almonds with sugar, butter and eggs
Spread mix on pastry, add your charm.
Cover with your other pastry dough. Join all the borders together by pinching the pastry with your fingers.
Take a knife to draw a pattern on the dough. Use the egg yolk to paint over the pattern with a brush.
Bake for 20-30 minutes until golden and puffy.
All done, you just need to prepare your crown, share and eat. Bon appetit !
The person who gets the fève is Queen or King for the day.
